  • 1 c (8 oz) whipping cream or heavy cream
  • 3/4 c (6 oz) cream of coconut
  • 1/2 c sweetened flaked coconut

Directions

Chill a large mixing bowl and the beaters of an electric mixer (or whisk attachment of a stand mixer) in the refrigerator for about 15 minutes. Remove from the refrigerator and pour the whipping cream into the chilled bowl. Beat on high speed until stiff peaks form. Gently stir in the cream of coconut and sweetened coconut. Spoon into a freezer safe container, cover, and freeze for about 4 hours or overnight

FLIP-FLOP

In a tall glass, place 1 scoop of orange sherbet, 1 t jam of any flavor (we are partial to lioloka, which is passion fruit), then 1 scoop of vanilla ice cream (Lappert’s is a Kauai favorite).  Repeat until glass is 3/4 full.  Fill glass with chilled ginger ale.  Eat with joy and a spoon.

Wedge Salad Dressing and Marinade

1 cup brown sugar

1 cup apple cider vinegar

1 cup salad oil

1 cup water

1 Tablespoon prepared mustard

1 clove of garlic split

Combine all ingredients in a glass jar and refrigerate.  Best to let sit one day before using

Lihue AirportHoneymoon in Vegas featured the ticket counters at Lihue Airport.  As your plane approaches the airport, you can see the Nawiliwili Harbor and the  breakwater and docks where John Wayne paddled out to meet the yacht in Donovan’s Reef.  In the first Jurassic Park, you can see a bit of breakwater, filmed during Hurricane Iniki!

Kapaa: Another spot highlighted in Honeymoon in Vegas, you may remember Nicholas Cage talking into a phone (“Kapa ah ah ah a”).  On the north side of Kapaa, look for Otsuka Store, the stand in for Ramona’ oceanfront café in Jurassic Park.

Coco Palms: This famous hotel is in the process of being restored and is well known as the site of Elvis’ Blue Hawaii.

Anahola:  If you park in the Anahola post office lot, look at the towering peak used for the opening shot in Raiders of the Lost Ark.

Leis are made by any one of 8 techniques, including weaving, knotting, and braiding.  Come to Kauai on Lei Day and learn to make a lei.

When you think of Kauai, do you think of coconuts, palm trees, and leis?  Leis are closely associated with the Hawaiian islands, celebrations, and civic events.  Everyone loves to be greeted at the airport with a lei….and the kiss that traditionally accompanies it.  No event on Kauai is complete without leis.

May 1 is Lei Day on Kauai, and is one of the most beautiful traditions on island.  Hundreds of leis are entered into the contest held annually at the Kauai Museum: leis of flowers, fruits, beads, feathers, leaves, and more.  The leis are displayed for all to admire.  If you think a lei is simply pikake or plumaria blossoms, the variety, and beauty, of the leis will astound you.
