Nothin’ Says “Warm Aloha” Like Somethin’ From the Hawaiian Kitchen

Finally, it is the weekend, which means “slow down” and “big breakfast”.  During the week, we all tend to stop for coffee and pastries or a breakfast sandwich on the run.  Why not celebrate the weekend with a taste of Hawai’i?  And “Hawai’i” means “coconut” here on the Coconut Coast.

This recipe for Coconut  Pancakes with Pineapple Sauce is vegan, but you do not need to be vegan to enjoy them. (FYI — Kaua’i is the nature island and we have many vegetarian and vegan restaurants that serve up more than just tofu and bean sprouts!)  Also, if you are on island or have access to fresh coconuts and ripe pineapples, you are free to substitute them in the recipe for the commercial product found in grocery stores.  In either case, using fresh or commercial product, nothin’ says “Warm Aloha and Welcome to the Weekend” more than homemade pancakes and freshly brewed coffee.  ONO!



1 1/4 c regular flour

2 t baking powder

1/2 t salt

1 t ground nutmeg

1/3 c water

1 c soy milk (or regular milk if you are not vegan)

1 t vanilla extract

2 T maple syrup

2 T vegetable oil

1 c unsweetened or freshly grated coconut

Mix all dry ingredients.  Mix all wet ingredients. Combine the 2 and mix only until combined, and do not beat or overmix.  Drop by spoonfuls onto hot greased skillet.  Flip only once and remove to heated plate until all pancakes are baked.

Pineapple Sauce

1 (20-oz) can pineapple chunks in juice (or about 2 c fresh pineapple in chunks)

2 T cornstarch

3 T sugar

1 t vanilla

Mix pineapple and its juice (may need to add extra if using fresh pineapple) with cornstarch in a small saucepan until dissolved.  Stir in sugar.  Cook over medium heat, stirring often, until thickened, which will take about 7 minutes. Serve with pancakes.
