Jam Tomorrow, Jam Yesterday But Never Ever Jam Today:Coconut Jam


Do you remember this line from Alice in Wonderland? What was Lewis Carroll thinking? While many philosophers wax poetically on the meaning of this phrase — a life unfulfilled — we want to concentrate on breakfast…..and coconut jam.

Kaua’i aunties have long used backyard produce to make great ono meals for their families.  On the Coconut Coast, those meals might happily include coconuts. Like most homemade products, each family has its own take on coconut jam.

In any case, think of coconut jam on a slab of sweet Hawaiian bread toasted just right.  Or as a filling for little pastry tarts.  Or between layers of chocolate cake (okay, maybe not the breakfast you need, but probably the breakfast you want).  This recipe makes a nice-sized batch of coconut jam and it keeps forever in the refrigerator.

Coconut Jam

1 c packed freshly grated coconut (use fresh coconut, it is worth the effort)

1/2 c brown sugar (light or dark depending on taste preference)

1/2 c water

Mix coconut, sugar, and water in a heavy saucepan.  Cook over low heat, stirring rather often, until the mixture thickens and looks like jam.  Pour into jars that have tops (no need to do the hot water bath routine  as with other jams). Store in the refrigerator.

For an adult version, add 2 to 4 T of good Kaua’i rum with the water and continue with the recipe.

Coconut jam, toasted Hawaiian sweet bread, good Kaua’i-grown coffee.  Now, isn’t the morning looking better already?
