Mango Bread!


Mangoes grow freely on  Kaua’i, and the Farmers’ Markets and Sunshine Markets sport piles of them.  Little roadside stands or makeshift markets from the tailgate of a pickup truck often offer mangoes as part of their produce.

A sweet juicy mango is summer in your hand, although a wise sage once said the best place to eat a mango is the bathtub! Mango bread, on the other hand, is a tad bit less messy but just as fragrant and yummy.  Try this recipe for a Kaua’i delight, that uses mangoes, apple bananas, Kaua’i honey, macadamia nuts, and coconut.  If you are not blessed with fresh mangoes, you can purchase both frozen mangoes (to make into pulp) and ready-to-use mango pulp at many grocery stores.

Mango Bread

3/4 c vegetable oil

2 c sugar

1/4 c Kaua’i honey

3 eggs

1 t vanilla extract

2 1/2 c flour

1/2 t salt

3 t ground cinnamon

2 t baking soda

1 t baking powder

1 t lemon juice

2 c mango, chopped fresh or use prepared puree

1/2 c mashed apple banana (about 2 and you can use regular bananas)

1 c shredded coconut

1 c chopped macadamia nuts

Preheat oven to 350 degrees. Grease and flour a 9 x 5 x 3 loaf pan. Using an electric mixer or by hand, cream oil, sugar, and honey.  Beat in eggs one at a time.  Stir in vanilla and set aside. Chop up mangoes, with their juice into another large bowl. Add lemon juice and banana and mash together.  For a different consistency, you can puree the whole lot. Blend creamed ingredients into mango mixture.  Sift dry ingredients together and add to the bowl. Mix well.  Add coconut and macadamia nuts.  Bake for 30 to 45 minutes, or until tests done with a toothpick.

Turn out and cool on a rack, or just go for it and eat warm….life is short and should be enjoyed.  ONO!
