Kaua’i Marathon Carbohydrate-Loading Cookies

The Kaua’i Marathon is hot on your heels (September 4) and if you are a dedicated marathoner or half-marathoner, you have been pounding the roadways, calculating your tapering off, planning your strategy.

And thinking about carbohydrate loading…..

While we are not marathoners, we applaude those of you who are and offer an outstanding cookie recipe to help you carbohydrate load.  Nonmarathoners are welcome to get into the marathon mood and chow down, too!  You are going to need energy to cheer those runners on, after all!

Kaua’i Marathon Carbohydrate-Loading Cookies

1 c sweet butter

1 1/2 c brown sugar

1 egg

1 1/2 t vanilla extract

2 1/2 c rolled oats

1 c flour

1 t baking soda

1 c candy-coated chocolate candies (something like M and Ms)

1/2 c raisins

3/4 c chopped macadamia nuts

1/4 c freshly grated coconut

Cream butter and sugar.  Blend in egg and vanilla extract.  Add rest of ingredients, mixing to blend.  Probably should sample the raw dough just to be sure.  Drop by tablespoonsful (or use small ice cream scoop) onto ungreased cookie sheets.  Bake 8 to 10 minutes or more, depending on size, at 350 degrees. Let cool on cookie sheets for 2 to 3 minutes before eating one for quality-control purposes.  Remove to wire racks to cool completely.  Carbo load to your heart’s content because you deserve it!
