Kauai Christmas Cookies Your Way


It is that time of year again, with parties in the neighborhood, at school, the office, and church.  Nothing says “Christmas” more than platters of homemade Christmas cookies.

Uh oh…..

Don’t panic!  Christmas cookies do not need to be a chore, rolling, cutting, baking, decorating, etc.  What if you could quickly bake a batch of cookies that was uniquely your own and uniquely Kaua’i?

You can!  This recipe can be altered to use whatever you have in your kitchen or refrigerator.  You can develop a “signature” cookie or make a different version every time.  No rolling, no cutting, and you don’t need to decorate unless you feel very “Martha Stewart” (then a few colored sprinkles or sanding sugar before baking or a drizzle of confectioner sugar icing after cooling, maybe some colored sugar added too, would be very Christmasy).

Christmas Cookies Your Way

1 c shortening (Crisco, butter, margarine, or combination — clean out the refrigerator!)

2 eggs

1 1/2 c flour

2 t baking powder

1 t nutmeg

1 c sugar (generally white, but you can try brown)

1 c jam or sauce or cooked fruit

1/2 t baking soda

1 t cinnamon

1 t vanilla

4 c fine crumbs (cake, bread, oatmeal, cereal, nuts, raisins, coconut, chips, dates, dried pineapple or mango, etc)

Cream the shortening and sugar.  Add the eggs and jam/sauce/cooked fruit. Sift flour, baking powder, nutmeg, baking soda, cinnamon, and add to creamed mixture.  Work in the crumbs. Add vanilla.  Chill in refrigerator — the dough, not you! — for 30 minutes to overnight.  Drop by spoonsful (or use a mini ice cream scoop) onto a greased cookie sheet.  Bake 10 to 15 minutes at 350.  Watch the first batch.  Depending on your oven and ingredients, plus size of cookies, time will vary.

Suggestions:

  • apricot jam, coconut flakes, chocolate chips
  • applesauce, oatmeal, raisins, cinnamon chips
  • pineapple jam, coconut flakes, macadamia nuts, chopped dried pineapple
  • mango jam, oatmeal, chocolate chips, banana chips

You can invent any number of recipes using what you have on hand and combining your favorite tropical jams and dried fruits and nuts.  Just remember to put out a platter of cookies for Santa (who will be very hungry after that trip from the Mainland).
