School’s Out, Summer’s In: Time for Kauai Vacation Rental


Living the summer life with a picnic.  Is that ocean in the background?  We hope so because nothing is better than a picnic on one of Kauai’s 60 beaches.

School is out (or almost finished) for the year and summer has unofficially started with Memorial Day.  Now, 90 days of summer are calling out to you.  How will you spend your time?

Here is a handy recipe to get you thinking about beaches and picnics.  This salad dressing is traditionally used in a “wedge” salad of iceberg lettuce and crumbled blue cheese, but it is also great for marinating food (freshly caught Kauai fish, chicken, burgers, steak, or freshly harvested Kauai produce) or as a grilling sauce.  It keeps for about a week in the refrigerator, providing many delicious barbeques at one of Hula Now’s resorts.

Wedge Salad Dressing and Marinade

1 cup brown sugar

1 cup apple cider vinegar

1 cup salad oil

1 cup water

1 Tablespoon prepared mustard

1 clove of garlic split

Combine all ingredients in a glass jar and refrigerate.  Best to let sit one day before using
